I use a Masala, as it works well in this case. I chopped up some onions, spinach, chillies, added some sweetcorn and some mushrooms and put the sauce and ingredients into a pot and then let it heat for roughly 15 – 20 mins on 225 degrees.

I then took some boiled potatoes and put them in the oven for 5 mins on – then another 10 in microwave – adding a dab of butter after and some seasoning. YUM.

Method

  3. Stir in mushrooms and cook until lightly browned.
  4. Add the roast potatoes and coat in the mixture.
  5. Pour in the curry sauce and simmer for 5–7 minutes.
  6. Stir through spinach until wilted.
  7. Finish with garam masala and optional coriander.
