Tasty Crispy Chicken Jalfrezi Winter Warmer…

Curries are one of my favourite dishes. This is a dish that I have rustled up within half an hour with Pataks sauces, and ingredients such as chillies, mushrooms, spinach and breadcrumb chicken steaks.
This dish has colour, flavours, and, of course, vitality and vibrance. These are real winter warmers for snooker – and the goodness in taste and flavour.

A hearty, flavour-packed dish combining crispy breadcrumbed chicken with a rich jalfrezi-style sauce, fresh greens, and warming spice — perfect comfort food for cold nights.

Ingredients
For the chicken
- 2 chicken breasts (cut into bite-size pieces)
- 1 egg (beaten)
- 80g breadcrumbs
- Salt and pepper
- Oil for frying
For the jalfrezi sauce
- 1 tbsp oil
- 1 onion (chopped)
- 1 clove garlic (crushed)
- 1 tsp grated ginger (optional)
- 1 tsp curry powder or jalfrezi paste
- 1 red or green chilli (diced)
- 150g mushrooms (sliced)
- 1 tin chopped tomatoes (or 200ml passata)
- 1 tbsp tomato purée
- Salt to taste
To finish
- 2 handfuls fresh spinach
- Cooked basmati or pilau rice
- Fresh chilli slices (optional garnish)
- Squeeze of lime or lemon (optional)
Method
1. Prepare the crispy chicken
Season the chicken pieces with salt and pepper.
Dip in beaten egg, coat in breadcrumbs, then shallow-fry in hot oil until golden and cooked through (about 6–8 minutes). Set aside.
2. Make the sauce
Heat oil in a pan and gently fry the onion until soft.
Add garlic and ginger and cook for 1 minute.
Stir in curry powder or jalfrezi paste and cook briefly to release the aroma.
Add mushrooms and chilli, cooking until the mushrooms soften.
Pour in chopped tomatoes and stir in tomato purée. Simmer for 10 minutes until thickened. Season to taste.
3. Bring it together
Add the crispy chicken to the sauce and coat gently.
Stir in fresh spinach and allow it to wilt.
4. Serve
Spoon over hot rice and finish with fresh chilli slices and a squeeze of lime if desired.
