I love sausages. And I love curry. Most amateur snooker players like me love a curry.
Curries are also good for fending off colds and flus and for sweating them out.
Here’s my version of a sausage curry. I could have added red chillies – but the sauce is spicy as it is…
I include sweetcorn and have it over some PILAU RICE…YUM!
The sweetcorn adds texture – it’s winter comfort food!
You can do this with Pasta as well – curried pasta with a twist. Works well with Tortelloni…

🌶️ Curried Sausages (Rich & Comforting)
A hearty, warming dish with juicy sausages in a thick, mildly spiced curry gravy.
🛒 Ingredients (Serves 4)
- 8 good-quality pork sausages (Cumberland or your favourite)
- 1 large onion — sliced
- 2 cloves garlic — minced
- 1 tbsp curry powder (medium or hot depending on taste)
- 1 tbsp plain flour
- 2 cups beef or chicken stock
- 1 tbsp tomato ketchup (adds sweetness + body)
- 1 tsp Worcestershire sauce
- 1 apple — grated (optional but amazing for depth)
- 1 cup frozen peas
- Salt and pepper
- Oil for frying
👨🍳 Method
- Brown the sausages
- Heat oil in a large pan and cook sausages until golden.
- Remove and set aside.
- Build flavour
- In the same pan, cook onion until soft (5 mins).
- Add garlic and curry powder — cook 1 minute until fragrant.
- Make the curry gravy
- Stir in flour and cook 1 minute.
- Slowly add stock, stirring to avoid lumps.
- Add ketchup, Worcestershire sauce, and grated apple.
- Simmer
- Return sausages to the pan.
- Simmer 20 minutes until thick and rich.
- Finish
- Add veg and cook 5 minutes.
- Season to taste.
🍽️ Serve with
- Mashed potatoes (classic British style)
- Steamed rice
- Crusty bread
- Chips for a pub-style twist

- Add chilli flakes or fresh chilli 🌶️
- Stir in coconut milk for a creamier sauce
