Using Blue Dragon Hoisin & Garlic Sauce, this recipe combines the comforting richness of sausages with noodles and fresh vegetables for a dish that is sweet, savoury, and just a little fiery.
A fiery but sweet Chinese dish that packs a lot in flavour.

Ingredients
- 2–4 sausages (sliced)
- 1 small onion (sliced)
- 2 spring onions (chopped)
- Handful of mushrooms (sliced)
- 1 tomato (diced)
- 1 fresh chilli (diced)
- Egg noodles
- 1 pouch Blue Dragon Hoisin & Garlic Sauce
- 1 egg (optional)
- A little cooking oil
Method
- Cook the egg noodles according to the packet instructions and set aside.
- Heat a little oil in a frying pan or wok and cook the sliced sausages until browned.
- Add the onion, mushrooms, chilli and tomato, stirring for a few minutes until softened.
- Stir in the cooked noodles and pour over the hoisin and garlic sauce.
- Toss everything together so the noodles soak up the sauce.
- Add the chopped spring onions and stir through.
- Optional: fry an egg separately and place it on top before serving.
