WOK UNDERDOG: Creamy Crispy Pork Bowl with Rice & Greens

Crispy pork. Creamy mushroom saucey soup becomes a kind of Risotto. Egg rice. Greens. One wok. Proper comfort food.

Sometimes a dish starts with a complicated recipe. This one didn’t.

It started with a simple question: what happens if you take crispy pork, keep it crispy, and serve it over a rich cream-of-mushroom sauce rather than cooking it in the sauce?

That’s the WOK UNDERDOG way of thinking. Take familiar, affordable ingredients and look at what else they can become.

And once again, a humble tin of soup isn’t just soup.

It’s a sauce.

The Ingredients

For one generous bowl:

  • Pork, sliced into steaks or thick strips
  • Plain flour, for a light coating
  • 1 tin cream of mushroom soup
  • Kale
  • 1 onion, sliced
  • Egg fried rice
  • Spring onions, sliced
  • Oil for frying
  • Salt and pepper/seasoning to taste

You don’t need dozens of ingredients here. The pork, mushroom sauce and egg rice are already bringing plenty of flavour.

How I Make It

Start with the pork.

Give the pork a light flour coating and fry it in the wok until it’s beautifully golden and crispy on the outside and safely cooked through.

Then comes the important bit:

Take it out.

Let the pork rest while you make everything else. Don’t leave perfectly crispy pork swimming around in sauce and undo all that good work.

Using the same wok, add the sliced onions and cook until they’ve softened.

Then add the cream of mushroom soup.

I don’t want this to have the consistency of soup. I’m using it as the base for a sauce, so I use enough to coat everything and let it reduce until it’s thick and creamy.

Add the kale and cook it through the mushroom and onion sauce.

Heat your egg rice separately or in the wok once your sauce is ready.

Then build the bowl.

Egg rice first. Creamy mushroom, onion and kale sauce next. Slice the crispy pork and place it right on top. Finish with plenty of fresh spring onion.

Don’t bury that pork.

You’ve worked for the crunch!

Why This Combination Works

This bowl is really about contrasts.

The pork gives you that crispy, savoury bite.

The mushroom sauce is rich and creamy.

The kale brings an earthy green flavour.

The egg rice makes the whole thing substantial.

And those fresh spring onions at the end cut through some of the richness.

But there’s another contrast that’s even more important:

crispy pork + creamy sauce.

Instead of cooking the pork in the sauce, you’re eating the two together. Some bites get plenty of mushroom sauce; others retain more of that crunchy coating.

That’s much more interesting to me.

The WOK UNDERDOG Commentary

I’ve been experimenting quite a bit with tinned soup as a cooking ingredient rather than simply something you heat up and eat from a bowl.

And there’s a bigger idea behind that.

Open your cupboard and see a tin of cream of mushroom soup.

What do you see?

Soup?

Fair enough.

But what if you see:

A pasta sauce.

A sauce for mince.

A coating for tortilla ribbons.

Or the creamy base underneath crispy pork?

Suddenly one inexpensive tin has become the starting point for several completely different meals.

That’s what WOK UNDERDOG is about.

I’m not trying to tell people there is one technically perfect way to cook dinner. I’m interested in combinations, experimentation and getting more imaginative with ordinary ingredients.

The same applies to the pork.

You could throw it into the mushroom sauce. It would probably taste perfectly nice.

But then I started thinking about texture.

Why make pork crispy if I’m immediately going to make it soggy?

So cook it first. Rest it. Make the sauce. Then put that crispy pork back where it belongs β€” right on top.

One little decision changes the whole experience of the bowl.

And that’s often how my favourite WOK UNDERDOG dishes develop.

Not by completely changing the recipe.

Just by asking:

β€œWhat happens if I do this differently?”
