This light and sweet mackerel dish with noodles and veg hit the spot but it’s another quick dish up in under 20 mins. Simple. Tasty. Full of flavour.
Quick recipe-style summary
Marinade the mackerel fillets with:
- A spoon of jam
- Chinese five spice
- Light soy sauce
Let that sit while you prep:
- Mixed vegetables (your choice) We chose some spring onions and green veg and some yellow peppers for the base but you can have variations – it’s up to you and your preferences.
- Garlic
- Noodles (straight to WOK)
- Sweet chilli and garlic sauce or sweet and sour (choice)
Start by stir-frying the garlic and veg in the wok until they begin to soften. Add the marinated mackerel and let it colour gently, allowing the glaze to catch and caramelise.
Toss in the noodles, add a little sweet chilli sauce, and stir everything through until glossy, hot, and ready to serve.
Snooker-style finish
Like a good frame, this dish is about balance—attack and control.
The sweetness opens the shot, the five spice adds cue-ball control, and the chilli gives it that late-frame pressure.
